Leftover Ham Recipes
After Easter, we had a lot of extra food. Â My sister has sent over some good leftover ham recipes. Â Thanks!
Ham and Potato Omelette
Ingredients:
- 4 slices of bacon, chopped
- ½ cup ham, chopped
- ½ cup onion, chopped
- 1 cup mushrooms, sliced
- 2 cups diced potatoes
- 10 eggs
- ½ tsp salt
- 1 tsp oregano
- 1 cup mozzarella cheese, shredded
Directions
Place bacon, ham and onions in a pan. Cook on medium heat for 5 minutes. Add potatoes and cookfor another 10 minutes or until potatoes are soft and bacon is cooked. Add mushrooms. In a separatebowl, mix eggs, salt and oregano. Slowly pour over potato mixture. Cook 5 minutes then cover pan andcontinue to cook until the eggs are set. Remove lid and sprinkle with cheese.
Serves 6-8 normal people or 2 normal people and 2 teenage boys.
Creamy Ham Soup
Ingredients:
- 2 tbsp butter
- ½ cup chopped onions
- ½ cup chopped celery
- ½ cup chopped carrots
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup chopped ham
- ½ cup peas
- 1 cup corn
- ½ tsp salt
- 1tsp thyme
- 1 cup flour
- ¼ cup flour
Directions:
In large saucepan melt butter. Add onions, celery and carrots. Cook for 5 minutes. Add chicken broth,ham and potatoes. Simmer for 15 minutes or until potatoes are soft. Add peas and corn. In a separatebowl, mix milk and flour until smooth. Slowly whisk mixture into soup. Stir constantly until soup hasthickened.
