|Fennel Bulb, thinly sliced||1|
|Granny Smith Apple, thinly sliced||1|
|Zest of one Orange|
|Juice of one Orange||approx 1/2 cup|
|Grated Ginger||1 tsp.|
|Olive Oil||1/4 cup|
|Salt & Pepper, to taste|
In a bowl, whisk together orange juice, olive oil, ginger, salt and pepper. Add fennel and apple. Toss to coat with the dressing. Sprinkle zest over the top.
Note: any tart apple could be used if you don’t have Granny Smith.
