|Olive oil||1/4 cup|
|Juice of one lemon|
|Dijon mustard||1 tbsp.|
|Worchestershire sauce||1/2 tsp.|
|Fresh minced garlic||1 tsp|
|Fresh chopped rosemary||2 tbsp.|
|Fresh chopped mint||2 tsp.|
Mix all ingredients together. Rub all over the leg of lamb and let set in the fridge for a minimum of 1 hour.
Roast at 350°F until the internal temperature is at least:
- 145°F for medium rare
- 160°F for medium
- 170°F for well done.
