Homemade Soup

Do you like soup? I do. After enjoying a cool autumn morning, I don’t think there is anything more satisfying than a warm bowl of homemade soup for lunch.
The really great thing is that soup can be so easy to make. Follow a few basic steps, and you can make hundreds of different kinds of soup. The hardest part is trying to decide what kind of soup you are going to make. Take a look in your fridge or on your counter. What’s laying around? Carrots, squash, potatoes, tomatoes, broccoli, cauliflower? Any of these (or a combination of a few) would make a great soup. Today we actually tried carrot, ginger and beet soup. It was delicious! It was also quite pretty if I do say so.
- Select the vegetable for your soup. Peel if necessary and then chop into cubes. You’ll want about 2 cups.
- Dice one onion.
- Peel and mince one clove of garlic
- Melt 1 tbsp of butter in a large sauce pan.
- Add onion. Stir occasionally so that the onion doesn’t burn.
- When the onion is soft, add the vegetables, garlic, and any spices or seasonings you think you might like.
- Add 2 cups of chicken stock.
- Simmer until the vegetables are soft.
- Transfer to a blender (or use and immersion blender) and blend until smooth.
- Return to sauce pan.
- Add 1 cup of milk (or cream). You could even add cheese at this point if you wanted to.
- Allow the soup to simmer until hot.
That’s it. Your done. Pour your homemade soup into a bowl or a mug and enjoy.

Making soup is my number one solution to using up an overabundance of veggies! I tend to add less liquid and blend the soup with my stick blender to get a rich, creamy texture and then portion them into small containers and freeze them for later. My favorite soup would have to be Broccoli-Cheddar soup, so comforting on a cold autumn day!
Freezing the soup is a great idea. I’ll have to try making bigger batches so that we can do that.
I make a Cream of Chicken soup that my family loves. Its very quick and convenient to make on a busy night. I start with about 1/2 cup chopped onions and saute them with some butter. Then I add the meat from a store bought deli chicken finely chopped. Add about 3 cups chicken broth and 1/2 to 3/4 cup milk or cream. Simmer 20 minutes or until hot. Serve with warm biscuits for a easy and delicious meal.
