Why Cook With Beer?
Why should you cook with beer? Well, there are a lot of reasons, but here are just a few…
Batters:
When beer batter is heated it releases bubbles of carbon dioxide. This is great for batters because it makes for a light, crispy crust.
Marinades, Bastes and Brines:
In marinades, brines and bastes, the alcohol in the beer is able to penetrate meat better than other liquids. This allows it to carry flavour deeper into the meat.
Flavour:
It is as simple as that. Beer adds flavour. Depending on the variety, beers can have smokey, sweet, bitter, acidic, or a combination of flavours.
In addition to the flavour of the beer itself, the alcohol in beer is able to dissolve essential oils and other organic compounds that are not soluble in water. Once dissolved, the flavours are more available to your senses of smell and taste.

I read your recipes about cooking with beer. I had a moose roast to cook and did not know how I was going to do it. I read a beer recipe for roast beef using lots of onions and garlic. I thought that would work great to moose also. I followed the beef recipe but used the slow cooker instead of the oven. My next meal will be to try the beer can chicken. I have heard a lot about it and now will give it a try. Thanks for the recipes. It is a great idea to use beer.
What a great resource! As a huge fan of craft beer I’m always looking for ways to incorporate beer into my recipes… unfortunately I am not the most creative cook so these recipes will come in handy. I recently tried Dogfish Head’s Saison du Buff, brewed with parsley, sage, rosemary, & thyme… it was so herbal that I didn’t really enjoy it on it’s own but I am very interested in trying to cook with it. I think a marinade or brine would be perfect!

Lots of great ideas here. I particularly like the sound of the salted beer caramels – something very different indeed.
I would never have thought to use beer in desserts or candies before I made this list. There really are a lot of unique ideas here.
