When you look at a cupcake, you’ve got to smile

It has been a busy week.  We’ve been having weekly bake sales at work to raise money for the United Way.  This week it was my turn to bring in some goodies.  I thought that cupcakes would be a good idea.  They are pretty standard bake sale fare.  Since it is close to Halloween, and since we happened to have some leftover pumpkin in the freezer (we made soup a few weeks ago), I wanted to make pumpkin cupcakes.  I looked at a lot of recipes, but couldn’t find any that used fresh (well frozen) pumpkin.  I decided I just had to make some substitutions, and come up with my own recipe.

So, I spent last night baking.  Before going to bed, we shared one cupcake to to ensure they really were edible.  I thought they tasted pretty good, and after looking for enough containers to carry them all, took them to work for the bake sale.  And, happily they all sold, and we raised a bit of money.
