Fennel Bulb, thinly sliced 1
Granny Smith Apple, thinly sliced 1
Zest of one Orange
Juice of one Orange approx 1/2 cup
Grated Ginger 1 tsp.
Olive Oil 1/4 cup
Salt & Pepper, to taste

In a bowl, whisk together orange juice, olive oil, ginger, salt and pepper. Add fennel and apple. Toss to coat with the dressing. Sprinkle zest over the top.


Note: any tart apple could be used if you don’t have Granny Smith.
