Olive oil 1/4 cup
Juice of one lemon
Dijon mustard 1 tbsp.
Honey 1 tsp.
Worchestershire sauce 1/2 tsp.
Fresh minced garlic 1 tsp
Fresh chopped rosemary 2 tbsp.
Fresh chopped mint 2 tsp.


Mix all ingredients together. Rub all over the leg of lamb and let set in the fridge for a minimum of 1 hour.
Roast at 350°F until the internal temperature is at least:

  • 145°F for medium rare
  • 160°F for medium
  • 170°F for well done.
