• 1 well marbled strip steak
  • 2 tbsp mixed whole peppercorns (black, white, green & red)
  • 1 tsp whole all-spice
  • salt, dash
  • 1 tsp vegetable oil
  • 1 tbsp butter
  • 2 tbsp minced shallots or onion
  • 2 tbsp red wine
  • 1/2 cup beef stock
  • 1 tbsp butter


Crush peppercorns, all-spice, and salt in a mortar and pestle.  Rub over steak.

Heat oil and butter together in frying pan.  Add steak and cook to desired doneness.

Remove steak from pan.  De-glaze the pan with the shallots, wine, and stock.  Simmer until sauce reduces by half.  Add butter.
