Ingredients:
Fennel Bulb, thinly sliced | 1 |
Granny Smith Apple, thinly sliced | 1 |
Zest of one Orange | |
Juice of one Orange | approx 1/2 cup |
Grated Ginger | 1 tsp. |
Olive Oil | 1/4 cup |
Salt & Pepper, to taste |
Directions:
In a bowl, whisk together orange juice, olive oil, ginger, salt and pepper. Add fennel and apple. Toss to coat with the dressing. Sprinkle zest over the top.
Note: any tart apple could be used if you don’t have Granny Smith.
