Brown HT

Brown HT is a reddish brown food dye. It is also known by the names chocolate brown, food brown 3, C.I. 20285, or the E Number 155.

Description:

Brown HT is a diazo dye. Diazo refers to a type of chemical compound that has two linked nitrogen atoms (the French word for nitrogen is azote). Azo dyes account for roughly 60 to 70% of all dyes used in the food and textile industries. The reason they are so popular is that azo dyes are cheap to produce and are more stable than most natural food dyes.

It is sometimes referred to as a coal tar dye, but this is a bit misleading. The chemicals may have first been discovered during experiments with coal tar. However, like many organic compounds used in food additives and pharmaceuticals today, Brown HT is produced byproducts of the petroleum industry. This shouldn’t be as scary as it sounds. Once the organic compounds have been extracted, the source isn’t important.

The chemical name is Disodium 4,4-(2,4-dihydroxy-5-hydroxy methyle-1,3-phenylene biazo)di(napthelene-1-sulfonate.)

Purpose:

Brown HT is mostly used as a food dye in the baking industry. The suffix HT is for high temperature, meaning the dye is stable during baking.

Common Uses:

Although it is used mainly in chocolate cakes, it might also be found in milk, cheeses, yogurts, and jams.

It is not allowed in Canada2 or the United States3. It is approved in the European Union4, but may be banned in individual countries such as Austria, Belgium, Denmark, France, Germany, Norway, Switzerland, and Sweden.

Brown HT is approved in Australia where it is common in chocolate milk.

Side Effects/Health Issues:

The European Food Safety Authority says that there have been no cases of intolerance or allergies have been reported after oral exposure to Brown HT. However, many other internet sources indicate it may produce allergic reactions in people with asthma or people sensitive to aspirin. This is likely due to the fact that it is related to the azo dyes like Allura Red.

Notes:

It is currently quite hard to do an internet search for products containing a particular additive. However, the FDA does publish import alerts for items that contain banned substances. In the case of Brown HT, we can see that it was found in biscuits from Fiji and in cake decorating supplies from the UK.

Chlorophyllin Copper Complex

Chlorophyllin Copper Complex

Chlorophyllin copper complex is often used as a bright green food dye.  It is also known by the name natural green 3 or by the E number 141.

Description:

Chlorophyll is the pigment that gives plants their green colour.  The chlorophyll plays an important role in the process of photosynthesis in which the plants absorb energy from sunlight.  The chlorophyll molecule is basically ring-shaped with a magnesium ion at it’s center.

Chlorophyllin copper complex is a synthetic molecule.  It is produced by first extracting the chlorophyll from plants (usually grasses such as alfalfa, fescue or rye).   The chlorophyll is acid treated to replace the magnesium with hydrogen, and then the hydrogen is replaced with copper.

Chlorophyllin copper complex provides a much brighter and more stable green colour than pure chlorophyll.

Purpose:

It is used as a green dye in a wide range of foods including drinks, ice cream, candy, sauces, pickles and Sage Derby cheese.

It can be mixed with Curcumin to provide a lime green shade.

Beside it’s use as a food dye, it is also used in many health care products such as cosmetics, deodorants (internal and external) supplements, and skin care products.

One interesting non-food related use is in bone cement.  The green color is added to improve visibility.  It makes it easier to see the cement against the bone.

Side Effects / Health Issues:

When it is added to food as a colouring agent, the amount that you would actually eat is very small.  However, it might be possible to get much larger doses from other uses:

  • Chlorophyllin may be found in cosmetics.
  • It is used in alternative medicine and has been used to help reduce the odor of feces or urine.
  • It is often sold as an herbal supplement.

Chlorophyllin copper complex is generally considered safe, and most people will never have any adverse reactions.  When it is heated, copper will be released, but concentrations will not reach toxic levels.

Rarely, some people may experience loose stools or green-colored urine or stools (a normal side effect of chlorophyllin and not cause for concern).

Notes:

There really are no dietary restrictions with Chlorophyllin.  It can be consumed by all religious groups, vegans and vegetarians.

Fast Green: The least used of the seven main FDA approved dyes.

Fast Green

Fast Green is an artificial food dye with a bright sea green colour. It is also known by the names Food green 3, FD&C Green No. 3, Green 1724, Solid Green FCF, and C.I. 42053.

Fast Green has an E number of 143.

Purpose:

As mentioned, Fast Green is a bright sea green or teal food dye. However, the shade of green varies with the acidity (or pH) of the food being coloured. It is one of the least used artificial food dyes.

A Triphenyl Methane Molecule is the base for Fast Green


Fast Green is a triarylmethane dye. This means it has the triangular organic triphenyl methane molecule (see animation above) as a base. There are various methods of producing Fast Green, but most use benzene and other petroleum related chemicals.

It actually looks like a dark red or purple powder. When it dissolves, the colour changes depending on the acidity (pH) of the solution. The colour can range from green to blue-violet.

Common Uses:

It has been approved for use in Canada1, the United States2, and Australia4. It is not approved in Europe5. It is sometimes used for:

  • Canned green peas and other vegetables,
  • Jellies,
  • Sauces,
  • Desserts, and
  • Dry bakery mixes

Surprise Peas

Fast green is the least used of all artificial food dyes. It is more common for foods to be coloured green by using a combination of tartrazine and a blue dye such as brilliant blue. Another possibility is the used of a green dye such as Green S.

Health Issues / Side Effects:

Fast green is not absorbed by the intestines very well. This means most of what is eaten is excreted.

However, there have been studies that show it might produced tumors in lab animals. In its undiluted form, it may pose a risk of irritation of eyes, skin, digestive tract, and respiratory tract.

Notes:

Like a lot of other food dyes, fast green can also be found in cosmetics.

It is also used in biology to stain cells so that they show up better under the microscope.

Paprika Oleoresin

Purpose

Paprika oleoresin is a natural food additive used because of its ability to color foods a deep red.

Description

Paprika oleoresin is a red-orange oily material and it is used to colour foods. It also has a slight odor. It is extracted from the common sweet red pepper, Capsicum annum L. In Hungarian, the word paprika refers to both the spice and the fresh pepper.

Paprika oleoresin may also be called paprika extract or oleoresin paprika.  In Europe, it is designated with the E number 160c.  It is similar to lycopene which has an E number of 160d.

Because it is derived from natural food sources it is exempt1 from Food and Drug Administration (FDA) certification for food colourants.

To make paprika oleoresin, the peppers are harvested and dried. The peppers may be left whole, cut into pieces, or powdered. Then a solvent is percolated through the peppers. The solvent can be any one or a combination of the following:

  • Acetone,
  • Ethyl alcohol,
  • Ethylene dichloride,
  • Hexane,
  • Isopropyl alcohol,
  • Methyl alcohol,
  • Methylene chloride, or
  • Trichloroethylene

The solvent is then removed, leaving the paprika oleoresin.  Removing 100% of the solvent would be impossible.  Some residue may remain in the final product.

The main components of paprika oleoresin are the xanthophylls, capsanthin, and capsorubin. These are the red components. and beta-carotene (the yellow component). All of these molecules are in a group of molecules called carotenoids.

Xanthophylls

The name comes from the ancient Greek words xanthos, which means yellow, and phyllon, which means leaf.

Xanthophylls are carotenoids that contain oxygen atoms.

capsanthin

One of the two compounds that form the red component of paprika oleoresin.  It is a di-hydroxy, keto carotenoid. Simply put, this is just a carotenoid that contains an oxygen carbon double bond.

Capsorubin

The second of the two compounds that form the red component of the oleoresin.

Beta-Carotene

Beta-carotene is the yellow-orange pigment we all know from carrots. A carotene is a carotenoid that that only contains hydrocarbons and no oxygen.

Common Uses

Paprika oleoresin is used wherever red and orange colorings are desired.  It is commonly used in:

  • cheeses
  • orange juice
  • sauces
  • meats (sausages)

It is often used in combination with real paprika to intensify the colour.

One of the most unique uses for paprika oleoresin is to add it to poultry feed5.   This gives the meat and egg yolks a darker yellow appearance than is natural for them.

Health Issues / Side Effects

There is very little information on the health issues or side effects of paprika oleoresin.  Some people have reported allergic reactions to paprika and other red peppers.

Notes

One interesting note is that you can test the purity of paprika oleoresin.  Add two milliliters of sulfuric acid to a 0.5 gram sample. If it is pure, its color will change to blue.
